These fully cooked skewers are a great weeknight dinner. But how do you cook them? Are they healthy? Do they taste good?

How Do You Cook Costco Mediterranean Chicken Skewers?
West End Cusine makes the chicken skewers sold at Costco. They are fully cooked and need heating; you can do this in many ways.
On the Grill
If you are grilling, place them over medium heat and cook for about 7-8 minutes, turning halfway. The internal temp should reach 165 degrees.
On the Stove
Place them in a frying pan for indoor cooking over medium-high heat for a few minutes. You aren’t trying to cook them, just heat them. Use an instant-read thermometer to check temps; you are shooting for 165 degrees.
As for the skewers, leave the sticks in for the grilling to turn quickly. You can take the sticks out to cook in a pan. There is a small risk of scratching the pan, which can be a big issue with Teflon and granite coatings.
In the Oven
Heat in a preheated 400-degree oven for 8-9 minutes, turning once halfway through.
In the Air Fryer
Here’s how to cook the Costco Mediterranean chicken skewers in the air fryer. Preheat the air fryer to 350 degrees. Coat the pieces in olive oil to prevent them from drying out. Place in one layer in the basket with plenty of space between the pieces. Cook for 5-7 minutes.

These skewers are a great shortcut for dinner, but there are some drawbacks. They have a much firmer texture than regular chicken. They are also pretty salty.
How Do You Use Costco Chicken Skewers?
In a Pita
For a simple dinner, serve with hummus or tzatziki, fresh tomatoes, and lettuce. Costco sells naan bread for a great price.
Wraps
Place the chicken in a wrap with bacon, lettuce, and ranch dressing. The options are endless. If you need inspiration, think about your favorite deli sandwich and go from there.
Over a Salad
Add some protein to your greens. We love this Italian chopped salad from the Cozy Apron. The dressing is GREAT!
Mezze Platter
A mezze platter is a large platter of all yummy Mediterranean foods like olives, hummus, cucumbers, tomatoes, feta, etc. It doesn’t typically have grilled chicken, but it would be a great addition.
Costco Chicken Skewers Review
Even though they are cooked, they still need reheating. Cooking fresh chicken takes a few extra minutes, and you can control the spices.
These will work if you want to think about cooking. It isn’t on rotation in our meal plans like the meatballs and tortellini, as we didn’t like the texture or flavor.
If you are looking for a great alternative, buy a large bag of raw chicken tenderloins from the warehouse giant. The smaller size helps to avoid getting the dreaded rubbery chicken, and they cook very quickly. I’ve cooked them from frozen several times, too.
As for seasoning, you could marinade the chicken, but that takes time to prepare and absorb into the meat. For a quick dinner, spices are the best way to impart flavor.

Cavender’s Greek – It’s considered Greek, but it’s suitable for all cuisines.
AP Seasoning – A simple flavor that’s great for really anything.
Butt Rubb – A great BBQ flavor that isn’t too salty. It has a little heat to it.

Not impressed with these chicken skewers. You get less than 2 pounds for $18 and the flavor is about the same as the FAR cheaper frozen precooked chicken. I expected the flavor to pop at least like a rotisserie chicken but they were pretty bland. Avoid these and go to the freezer section or get a Rotisserie chicken.
