An Honest New West Knifeworks Review
We know the importance of a good knife. A bad one can make chopping an arduous task, while a good one will make it a breeze. When traveling by car, we take our knives with us on vacation. We’ve had good ones, terrible ones, and great ones.
When New West reached out to us to try their product, we were excited to compare their Santoku to our beloved Wustoff. How does it fare? Here’s our honest New West Knifeworks review.
There are two main factors to consider when choosing a new knife: composition and feeling. You want a well-constructed product that feels good in the hand.
Most knives are steel. But not all versions of steel are created equally. You want a combination of stainless and carbon. The stainless aspect resists rust and corrosion, while the carbon makes the best edge. New West has a higher percentage of carbon than any of its competitors. I was immediately impressed at how well it chopped. Way better than my Wustoff.
These things are sharp!
Equally as important is how it feels in your hand. When I first held the knife, I noticed that it was much lighter than I had expected. Initially, I was concerned that it wouldn’t work well for me, but as I used it more and more, I noticed that I had much less fatigue in my wrist. I’ve had my husband and 12-year-old son use it, and they agree.
It feels good in your hand.
I’ve been using the New West Santoku for over a month now, and it’s the one I reach for daily. I’m truly impressed with how well it performs. Plus, it’s nice to look at.
Now, you may be wondering, what’s the catch? Where’s the bad? Well, the biggest detractor is the price. Like other good quality knives, you are going to pay a lot. But, when I realized that I purchased my last knife over 15 years ago, I realized I was making an investment.

How To Care For New West Kniveworks Products
- Wash them carefully. I am not just discussing it for safety purposes, although that’s paramount. Hand wash your New West Knives with soap and water and thoroughly dry them after each use. Do not submerge in water for an extended period. It can stain if left near corrosive materials for a while. If this happens, use a b
- Use the proper cutting boards. Cutting on granite, glass, stone, Corian, metal, ceramic, or other hard material dulls your knives. We love the eco-friendly composite boards from Epicurean. They are dishwasher safe and fit the bill for being knife-friendly. Purchase them on Amazon.
- These knives are meant for food but do not use them on bones, frozen foods, or ice. These are too hard and may chip the metal.
- Dull knives don’t work well and can cause injury. Home cooks should sharpen their knives about once a month. A ceramic sharpening rod is perfect for this. New West has a great tutorial that owners should check out.
