Spinach Salad with Truffle Vinaigrette

Spinach Salad with Truffle Vinaigrette

I have long been singing the praises of truffle oil. My obession with Truffle Popcorn has not waned. I am trying to convince everyone and their mothers to buy it. It has so many purposes! So my best friend throws out the challenge, what are some ideas for a Weight Watchers friendly Truffle Oil recipe? Challenge accepted.

Enter the Shari Salad. Clocking in at five Weight Watchers Freestyle Smart Points this salad with its truffle oil vinaigrette is a great addition to your meal plan. Hearty and filling with different flavors and textures, this recipe with a few ingredients, is anything but boring. Here are some tips to set you up for success.

Tuiles are a fancy way of saying baked parmesan chips. If you haven’t had them before they are salty and a bit sweet and add a good crunch to the salad.

Use a large frying pan when cooking. You want plenty of space for the mushrooms. Julia Child always said “don’t crowd the pan.” This is certainly true here. You want the mushrooms to cook evenly so a pan with plenty of surface area is best. I also like to salt the mushrooms a bit to enhance flavor as well as to help them release some of their moisture.  

While the mushrooms are cooking, you can assemble the dressing. If you aren’t familiar with truffle oil, it’s a great addition to any kitchen and it makes so many dishes feel fancy. You can read more about it over here.

My go-to way of making any dressing is to place all the ingredients in a mason jar, put a lid on it, and shake it like crazy. This helps to mix the ingredients nicely. Plus you can store the jar directly in the refrigerator, creating fewer dishes to clean up.

After you mix the dressing, you will want to taste it to see if you need any salt or pepper. One great way to do this is to take a piece of spinach and dip it into the dressing. This will give you a better idea of how the salad will taste than by just trying the dressing alone.

When assembling the salad, allow the mushrooms and tuiles to cool a bit before placing them.

Ingredients

  • 5 oz baby spinach
  • 1 tbsp olive oil
  • 8 oz baby bella mushrooms
  • 1/2 cup parmesan cheese grated
  • 3 tbsp balsamic vinegar
  • 2 tbsp white truffle oil

Instructions

  1. Preheat the oven to 400 degrees. On a baking sheet, place 1tbs mounds of parmesan on a baking sheet. Bake 5 minutes until golden brown. 

  2. Heat the olive oil in a large frying pan over medium-high heat. Add the mushrooms and lightly season with salt. Cook until they are soft, about 4 minutes. 

  3. Add the balsamic vinegar and truffle oil to a mason jar and shake well to combine. 

  4. Assemble the salad.
