Servings 4

  • 8 oz farro
  • 2 tbs olive oil divided
  • 1 lb. sausage casing removed
  • 4 cloves of garlic minced
  • 1 cup chicken broth
  • 1 head broccoli cut into florets
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1 cup grapes halved

Balsamic Dressing

  • 1/4 cup balsamic vinegar
  • 1/2 Tbs. mustard Whole grain or dijon
  • 2 Tbs. honey
  • 3/4 cup olive oil
  • 1 clove of garlic mined

  1. Bring a large pot of water to a boil. Add the farro and cook according to package instructions.

  2. Meanwhile, in a large skillet, heat one tablespoon of olive oil over medium-high heat. Crumble the sausage into the skillet and cook, breaking apart with a spoon, until lightly browned, 7-8 minutes. Reduce the heat to medium and add the garlic; cook for 1 minute more.

  3. Add the remaining tablespoon of olive oil, chicken broth, broccoli, salt, and red pepper flakes. Cook for 4-5 minutes or until the broccoli is done to your likeness.

Make The Dressing

  1. Combine balsamic, mustard, honey, olive oil, and garlic in a bowl and whisk until thoroughly mixed or place in a jar with a tight-fitting lid and shake to combine.

  2. To serve, place the sausage mixture and farro in a bowl and top with dressing.
