Clocking in at five Weight Watchers Freestyle Smart Points this salad with its truffle oil vinaigrette is a great addition to your meal plan. Hearty and filling with different flavors and textures, this recipe with a few ingredients, is anything but boring. Try it tonight with some grilled chicken or a good steak.

  • 5 oz baby spinach
  • 1 tbsp olive oil
  • 8 oz baby bella mushrooms
  • 1/2 cup parmesan cheese grated
  • 3 tbsp balsamic vinegar
  • 2 tbsp white truffle oil


  1. Preheat the oven to 400 degrees. On a baking sheet, place 1tbs mounds of parmesan on a baking sheet. Bake 5 minutes until golden brown. 

  2. Heat the olive oil in a large frying pan over medium-high heat. Add the mushrooms and lightly season with salt. Cook until they are soft, about 4 minutes. 

  3. Add the balsamic vinegar and truffle oil to a mason jar and shake well to combine. 

  4. Assemble the salad.
